Bruschetta Recipe

If you ever feel like a light lunch, then there is nothing quite as satisfying and easy to make asĀ bruschetta.

For this recipe all you need is the following:

  • 5 large ripe tomatoes
  • 4 Cloves of Garlic
  • Large handful of Fresh basil
  • Extra Virgin Olive Oil
  • 2 Slices Bread (We used homemade for optimal taste, although you can also use a Ciabatta sliced in two or any other bread of your choice).

Method

This recipe is so simple to make. Simple chop the tomatoes into small cubes and place in a pan or bowl. Chop up the garlic into small pieces, tear or chop the basil into similarly small pieces and place in the same bowl. Add in around a tablespoon and a half of Extra Virgin Olive Oil and gentle mix the ingredients together.

In the meantime either toast you bread in the oven at around 200c for around 10-15 mins or simply toast under a grill.

Once the bread is ready, take a piece of your bruschetta mixture and rub it on the bread. Not only does this pass some of the flavours to the bread but it also makes it a touch softer. Once you have done this divide the bruschetta mixture between the two servings and enjoy.
